Ingredients:

🍃⅓ cup olive oil

🍃⅓ teaspoon of cinnamon

🍃1 whole medium rainbow trout (When you want to buy fish, always look at the gills, they should be red and moist)

🍃1 lemon - sliced

🍃1 cup fresh parsley - chopped

🍃1 cup fresh dill - chopped

🍃1 cup fresh coriander - chopped

🍃1 bunch of asparagus - washed and dried

🍃1 pound of potatoes

🍃3 cloves of garlic - grated

🍃salt and pepper for seasoning

🍃1 tbsp butter


Cooking:

  1. On medium high heat, add potatoes to a small pot with water and a pinch of salt, cover until it comes to boil, set the heat to medium-low and let it cook.

  2. Meanwhile potatoes are in the cooking process: set the oven to 450 degrees (preheat).

  3. Clean, wash the fish and dry with a paper towel.

  4. Mix herbs with salt, pepper, cinnamon, garlic, olive oil and saute with butter.

  5. Scoop the mixture inside the fish and layer with lemon slices.




6. Spray oil into a baking tray and place the fish.

7. Place fish in a preheated oven.



8. Drain potatoes, add to a baking tray, drizzle with some olive oil, let it cook for 5-10 minutes until golden brown (you can sauté the potatoes in the same pot after you drain it, just add some oil and sauté to golden).

9. At the end, add the asparagus to the tray, drizzle some olive oil and cook for 5 minutes.

10. Place everything on your desired dish and enjoy.

Fish should smell fresh and mild, not fishy, sour, or ammonia-like. A fish's eyes should be clear and shiny. Whole fish should have firm flesh and red gills with no odor.
