🐡 ⅓ garlic powder

🐡 ⅓ teaspoon saffron

🐡 ½ cup zucchini - diced

🐡 1 cup peas

🐡 1 small peaches - diced

🐡 1 apricot - diced

🐡 1 large avocado - cut to small pieces

🐡 1 rhubarb stick - diced

🐡 1 cup brussel sprouts - cut in half

🐡 1 red onion - cut in half

🐡 1 lemon juice

🐡 1 tablespoon extra virgin cold press olive oil

🐡 2 tbsp cilantro oil (olive oil optional)

🐡 2 tbsp butter (one tablespoon for cooking sea bass)

🐡 2 piece of seabass fish (about 1 pound) washed and dried, season with salt and pepper

🐡 2 baby yam - diced cooked🐡


  1. In a large non-stick skillet, on medium high heat, add oil and butter, place onion, brussels sprouts, zuchinni, peas, yam and cook for 5 minutes or until slightly cooked.

  2. Add peaches, apricot, rubarb and saute for about 5 minutes.

  3. While vegetables are in the cooking process, in another skillet add butter and place seabass to the skillet, sear one side for 5 minutes.

  4. Sear the other side of the fish for another 5 minutes.

  5. Check the vegetables and fruit, at this time they must be caramelized.

  6. Mix all the vegetables, add cilantro oil, lemon juice and mix well.


The best way to extract flavor from saffron is to soak the threads in a few drops of hot water for 5 minutes. Then when the sea bass is ready to serve, brush some saffron on it.
