🥔 2 small grass-fed chicken breasts - cut to 1/2 inches cubs

🥔 1 medium-large onion - sliced

🥔 6 small Russian banana potatoes - wash and cut to wedge

🥔 2 yellow carrots - cut to 1 inch

🥔 1 medium-large red beets

🥔 1/2 lemon juice

🥔 1/4 cup hot water

🥔 garlic scapes - diced (optional)

🥔 1 tablespoon chipotle sauce


1- Peel beets to remove the skin. Slice them up into ¼ inch long slices.

2- In a large non-stick skillet over medium-high heat, place potatoes, beets, carrots and scapes season with pink salt and pepper.

3- Add hot water and cover. Let it cook for 5 minutes.

4- In another skillet, saute onion and chicken breast with 1 tablespoon extra virgin cold press olive oil, after 5 minutes cover and let it cook for another 10 minutes and add lemon juice, stir well.

5- Season with salt and pepper, add chipotle and mix.

6- Meanwhile you saute chicken, check the potatoes, take the lid out and let the water evaporate.

7- Add 2 tbsp olive oil and stir occasionally.

Serve it with sautéed chicken and arugula salad or a salad of your own choice.
