👩🏻‍🍳 Leftover become even more tasty because it continues to absorb all the flavour and can be refrigerated for 4-5 days.


This recipe will teach you how to make the best stuffing for:

Red kuri squash, sweet dumpling squash, acorn squash and spaghetti squash.


How do you know if squash is cooked?

Simple! Prick the top of side of the squash with a fork. If it’s soft, then it’s ready.



Serving: 4-6

Time: 90-120 minutes


Ingredient for roasted vegetables:

🥘 ¼ tsp red flake paprika

🥘 ½ tsp garam masala

🥘 ½ tsp nutmeg, grated

🥘 ½ tsp salt

🥘 ½ tsp freshly ground black pepper

🥘 1 tsp dry thyme

🥘 1 tsp dry rosemary

🥘 1 small- medium size squash

🥘 2 red potatoes, diced in to 1/2 inch cubs

🥘 3 medium sweet potatoes, diced in 1 inch cubs

🥘 5 garlic clove, peeled

🥘 Pam spray


Remaining stuffing ingredients:

🥘 ½ cup frozen peas

🥘 ½ cup cooked long grain black rice (optional)

🥘 ½ cup cashews

🥘 1 cup cooked black beans

🥘 1 cup dry cranberries

🥘 1 tbsp pumpkin seeds (for garnish)

🥘 1 tbsp sunflower seeds (for garnish)

🥘 1 lemon, juice

🥘 1 bunch dill, thinly chopped

🥘 1 tbsp almond flake for garnish

🥘 1½ cups cooked cooked quinoa (check the recipe for quinoa)

🥘 2 tbsp olive oil

🥘 5 dry apricot, cut each to 8 pieces

🥘 5 large green olive, sliced


Ingredients for squash:

🥘 1 tsp olive oil + salt and pepper


How to prepare kuri squash:

  1. For this recipe I used a small-medium size squash.

  2. Cut the top of the squash from around the steam to use as a squash lid.(save the squash top)

  3. Scoop out the seeds. Mix salt and pepper with oil and rub the mixture or brush inside and out (sprinkle the cavity) the squash.

Method:

  1. Preheat the oven to 400F.

  2. Cover a large baking tray with parchment paper or silicone backing matt and spray the pan with pam.

  3. In a large bowl, mix all the vegetables with salt, pepper and olive oil well, then pour one layer into the tray.

  4. Place the tray into the preheated oven on a lower rack for 5 minutes.

  5. Lower the heat to 350 F, let it roast for 10 minutes, and always check for that golden color that you desire.

  6. Add the squash to the tray and cook for 10 minutes.

We don’t want to cook the squash more than this (we need a firm squash).

  1. Incorporate all the roasting and filling ingredients in a large bowl, taste to find out if you need more salt and pepper.

  2. Stuff the squash.

  3. Add squash lid back on.

  4. Cover the squash with parchment paper and foil on the top.

  5. Place squash in a casserole dish or roasting pan.

  6. Place the dish in a larger and deep tray (about 2 inches high fill the tray or dish with boiling water (about 1 inch of water). The water should come up about half way up the tray dish. 👩🏻‍🍳Fun fact: This method called Bain Marie or "hot water bath".

  7. Place in a hot oven.

  8. Cook the stuffed squash for 30-40 or until the flesh is tender.

  9. Uncover the squash and place it on a dish and take the lid off.

  10. Garnish with pumpkin seeds, sunflower seeds and almond flakes.
